Multi-purpose guacamole recipe. Perfect for dipping,
as a side dish, or pureed and served as a sauce. Recipe uses fresh
jalapeno pepper for heat. Take care in handling pepper.
Ingredients -
2 large Ripe Avocados
1/3 cup chopped Fresh Cilantro
2 tablespoon Fresh Lime Juice
Fresh Ground Black Pepper, to taste
2 small Plum Tomatoes (skin and seeds removed), coarsely chopped
Coarse Sea Salt,to taste
2 Green Onions, finely chopped
1 tablespoon chopped Fresh Jalapeno, diced, seeds and ribs removed
Preparation:
1. Cut open and pit the avocado. Scoop avocado into bowl with tablespoon.
2. Mash coarsely with a fork.
3. Sprinkle lime juice over avocado and fold in gently.
4. Add remaining ingredients, taste and add additional seasonings.

Homemade Tortilla Chips
Preheat oil in a deep-fryer to 360*F. Cut tortillas into 8 wedges each. Add tortilla wedges to hot oil and fry until golden brown. Remove from oil, place on paper towels, salt, to taste.
