Guacamole Dip with Sweet Onion and Jalapeno Pepper

Mashed avocado mixed with diced tomato, minced jalapeno pepper, diced sweet onion, fresh lemon juice, cottage cheese, garlic powder, coarse salt, and fresh ground black pepper. Guacamole chilled before serving.

Ingredients -
 
2 Avocados, halved and pits removed
2 Tomatoes, diced
1 Jalapeno Pepper, seeded and minced
1/2 cup Sweet Onion, diced
1 Fresh Lemon, juiced
1 cup Cottage Cheese
1/2 teaspoon Garlic Powder
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
 
Preparation:
 

1. Scoop flesh out of the avocado and place it in a medium size bowl.

2. Mash the avocado to your almost desired consistency.

3. Add the lemon juice to the avocado and mix well.

4. Mix in the tomatoes, jalapeno pepper, onion, cottage cheese, garlic powder, salt and pepper into the mixing bowl.

5. Stir until every ingredient is combined.

6. Chill for at least one hour.

7. Serve.

Garlic Powder

Garlic powder can be found in the spice section and is not the same thing as garlic salt, which is garlic powder with sodium added. Substitute one or two minced garlic cloves for the garlic powder, if desired.
