Guacamole

Authentic guacamole blends avocados with fresh onion, tomato, serrano chilies, lime juice, and cilantro. Seasoned to taste with hot pepper sauce and salt and pepper. Great recipe for serving with chips or as a side to gourmet mexican cuisine.
Ingredients -
 
4 medium Ripe Avocados, peeled, seeded, and diced
1 teaspoon Ground Cumin
1/3 cup minced Sweet White or Red Onion
1 medium ripe Roma Tomato, seeded, diced
2 Serrano Chilies, seeded, minced
1/3 cup chopped Fresh Cilantro
4 tablespoons Fresh Lime Juice
Hot Pepper Sauce, to taste
Sea Salt, to taste
White Pepper, to taste
 
Preparation:
 

1. Mash avocados lightly.

2. Do not puree.

3. Fold in cumin, roma tomato, onion, serrano chilies, cilantro, and fresh lime juice.

4. Season with hot pepper sauce, salt and pepper.

 

Variations and Recipe Ideas:
Substitute lemon juice for lime juice.
 
Substitute black pepper for white pepper.



Cooking Tip

White Pepper
The use of white pepper in this recipe is primarily for color. The white pepper becomes translucent, blends with the avocado in the guacamole, whereas black pepper will be visible.

Cooking Tip

Serrano Chilies
For a milder guacamole,instead of using serrano chilies try jalapenos. For a rich smoky hot flavor try using chipotle peppers.
