Grilled Avocado Guacamole with Cherry Tomatoes

Grilled avocado combined with diced red onion, minced jalapeno pepper, sour cream, fresh lime juice, garlic salt, hot pepper sauce, quartered cherry tomatoes, and fresh chopped cilantro.

Ingredients -
 

4 Hass Avocados, halved and pitted
1/2 cup Red Onion, diced
1 Jalapeno Chili Pepper, seeded and minced
1/2 cup Sour Cream
2 tablespoons Lime Juice
1/2 teaspoon Garlic Salt
1/2 teaspoon Hot Pepper Sauce, or more to taste
12 Cherry Tomatoes, quartered
2 tablespoons chopped Fresh Cilantro

 
Preparation:
 

1. Preheat an outdoor grill on low heat.

2. Lightly Oil Grate.

3. Cook the avocados on the preheated grill until just slightly browned and caramelized.

4. Allow to cool to room temperature.

5. Remove the skins, and cube.

6. Place 1/2 cup of the avocado into a mixing bowl, and mash together with the onion, jalapeno pepper, and sour cream.

7. Stir in the lime juice, garlic salt, and hot pepper sauce, then gently fold in the remaining avocado along with the cherry tomatoes and cilantro.

8. Chill 30 minutes before serving.

Cooking Tip

Jalapeno Chili Pepper

The jalapeno pepper adds a nice kick to dishes. For a pepper with slightly less heat, try the Poblano or Anaheim, for a little more heat try a serrano pepper. You could substitute a few drops of Tabasco sauce, hot pepper sauce or your favorite salsa for the minced chili pepper.

Cherry Tomatoes

Cherry tomatoes can be found in most supermarkets and farmers markets. They are generally packaged in small containers containing approximately 20 tomatoes. The grape tomato, a slightly smaller, but equally as flavorful tomato would be a suitable substitute.
