Gourmet Guacamole

Great guacamole recipe for serving as a dip for chips, table crackers, and vegetables. Gourmet guacamole is great as a side dish to mexican shellfish, chicken and fish entrees.
Ingredients -
 
4 Ripe Avocados, chilled and mashed with a potato masher
4 tablespoons Mayonnaise, chilled
1 small 2" Sweet Onion, chopped
4 Garlic Cloves , minced
3 tablespoons Fresh Cilantro, cut finely
1 Chile de Arbol, dried and finely crushed
1 teaspoon Ground Cumin
1/2 teaspoon Coarse Salt
1/2 teaspoon White or Black Pepper
 
Preparation:
 

1. Fold all ingredients in medium serving bowl.

2. Chill one hour so flavors combine.

 

Variations and Recipe Ideas:
Garnish with cilantro or parsley, and olive slices.
 
 



Cooking Tip

Storing Guacamole
If you aren't serving guacamole immediately, fold in a tablespoon of lime juice to avoid discoloration, and place plastic wrap over guacamole and press it against surface to keep air from reaching the guacamole.

Chile de Arbol

Chile de Arbol, Arbol Chile, or Red Chile are dried chilies that are very hot. A little bit of one of these peppers goes a long way. They are sold in many markets and specialty stores in plastic bags. As with any chili pepper, be very careful when handling these peppers to avoid possible injury.
