Fresh Guacamole

A great guacamole recipe combining fresh ingredients with some heat from the jalapeno and some rich flavor enhancers in the garlic and cumin. This guacamole goes well with authentic mexican cuisine, and as a staple in nachos and fajitas.
Ingredients -
 
4 ripe avocados, washed, peeled, pitted and mashed.
2 cups chopped, peeled Fresh Tomatoes
1/4 cup finely chopped Onion
1 Jalapeno Pepper, seeded and finely chopped
1 tablespoon Olive or Vegetable Oil
1 teaspoon White Vinegar
1 teaspoon Ground Cumin
1 teaspoon Salt
1 Garlic clove, minced
 
Preparation:
 

In a bowl, combine all ingredients; mix well. Let stand for about 1 hour. Serve at room temperature. Store in a covered container in the refrigerator.

Serve with chips or fresh vegetables for dipping.
 
 



Cooking Tip

Jalapeno Peppers
Jalapenos are hot! Take care in handling them. Wash hands immediately after handling and dicing, and avoid contact with eyes or face. It's not a bad idea to wear gloves to protect your hands, if you have them.

White Vinegar
Replaces the need for lemon or lime in the dish and will help the avocados from discoloring after being peeled and mashed.
