Make this wonderful guacamole and serve with warm homemade tortilla chips. Start by making a fresh tomato salsa, for use in both the guacamole and for serving with the chips.
Ingredients -
3 Avocados, diced, and mashed chunky style
1 cup Salsa
1 tablespoon Lemon Juice
1/4 teaspoon Salt
Fresh Salsa:
4 cups Tomatoes, diced
3/4 cup Red Onion, finely diced
1/4 cup Red Wine Vinegar
1 Jalapeno or 2 Serrano chilies, seeded and minced
1/2 cup chopped Fresh Cilantro
1/2 teaspoon Coarse Salt
Pinch of Cayenne Pepper, to taste
Preparation:
Guacamole:
Fold all ingredients together.
Salsa:
Combine all ingredients in a medium bowl.

Substitute parsley for cilantro.
Cooking Tip
Tomato Salsa
When preparing salsa, you will usually want to drain off any seeds and liquid. If you are pureeing or using the salsa as a sauce for meat or seafood, leave much of the liquid and seeds in the recipe.
