Cajun guacamole is great for use as a side dish with seafood meat entrees, and when served with tortillas as a dip. The cayenne and garlic give a nice smooth kick to the recipe.
Ingredients -
3 Avocados - peeled, pitted, and mashed
1 Lime, juiced
1 teaspoon Salt
1/2 cup diced Onion
3 tablespoons chopped Fresh Cilantro
2 Roma (plum) Tomatoes, diced
1 teaspoon Garlic, minced
1 pinch Ground Cayenne Pepper
Preparation:
1. Combine all ingredients in a non-metal medium sized bowl.
2. Mix well.
3. Refrigerate 1 hour to allow flavors to combine.

Purchase avocados that are firm if you will not be using immediately. Avocados will ripen fastest when stored in a paper bag on a kitchen counter at room temperature. Expect the avocado to ripen in two to three days.
