Authentic Mexican Guacamole

This classic guacamole approaches salsa in texture and consistency. It is an exceptional side dish to almost any authentic mexican meal, or serve as an appetizer with chips and salsa.
Ingredients -
 
2 Avocados, peeled and diced
8 Tomatillos
2 Garlic Cloves
1/4 Medium Onion, chopped
1 Serrano Pepper
3 tablespoons Cilantro, chopped
1 1/2 teaspoons Coarse Salt
juice of 1/2 Fresh Lime
 
Preparation:
 

1. Remove husks from tomatillos, wash and chop them.

2. Process tomatillos, onion, garlic, and pepper in blender a food processor for about eight seconds.

3. Add avocado chunks, cilantro, salt, and lime juice to the food processor bowl. Process additional ten seconds.

4. Texture should be chunky.

5. Taste, and adjust heat by adding more serrano chili.

6. Lime juice will keep guacamole from turning brown.

Tomatillos
Keep fresh tomatillos in the refrigerator. Remove husks and store in plastic bags, from one to two weeks.
